Barrel Roll No. 5 - Chandelle

CHANDELLE represents a perfect balance of fruit and funk, marrying the bright flavors of Golden Sweet apricots with the oak-aged complexity of sour beer. It begins as a blonde ale brewed with both malted and unmalted wheat, a blank canvas which is laid down in freshly emptied white wine barrels and topped off with our house souring culture. Over the course of a year these yeast and bacteria transform the liquid, bringing forth a beer that is both deeply funky and refreshingly sour. The barrels are then blended back together just before the final addition- a generous helping of fresh apricots plucked from Blossom Bluff Orchards in Central California. The tart flavors and aromas of the fresh fruit perfectly balance the acidic, bracingly sour base developed in the barrel.

Our first release of CHANDELLE back in 2012 used a different process from our 2014 release. To create the original Chandelle, we placed our Local Fields Polycot, an apricot wheatwine, into oak barrels that had previously held our Pugachev’s Cobra. We then added additional fresh apricots, brettanomyces yeast, and souring bacteria. Throughout the 12 month aging process new fruit was added to the barrel on an ongoing basis. We consider the new process developed in 2014 a better way of achieving the beer we had in our minds, through the 2012 release holds up very well. You’ll notice distinct differences between the releases due to the processes involved in their creation- a great chance to compare if you ever track down a bottle of 2012 CHANDELLE.

Chandelle: Consists of a maximum climb, maximum bank combination to obtain the greatest altitude gain for a given airspeed and at the same time making a 180° course reversal.
